ObjectivesIssues of sustainability and ethical trading impact on the ways in which the food industry has to operate. This course provides graduates with the scientific knowledge and skills needed to apply the principles of sustainability to the procurement of ingredients and equipment, processing, food safety and quality, and distribution within the industry. Students will learn how to implement a sustainable strategy in the context of the food industry. The course will also cover the principles of food processing with options in food safety, food biotechnology and food analysis.
Entry requirementsNormally a lower second class Honours degree in food science, food technology, agriculture, microbiology, consumer studies or similar subjects. Those with relevant professional qualifications or extensive professional experience will also be considered.

Assessment
You are assessed by reports, critical reviews and presentations, and a dissertation and an oral exam for your research project.
