BSc Nutrition and Food Science

  • Objectives Nutrition is central to the health of the nation and is becoming a major focus of interest for the food industry, the largest manufacturing business in Europe. This degree is aimed at students who wish to combine a knowledge of food chemistry, food processing and food safety, with an understanding of human nutrition. Students are eligible to apply for a prestigious Northern Foods or Sainsbury's Scholarship.
  • Entry requirements Required subjects: two A level science subjects (chemistry preferred) and additional A levels or AS levels in other subjects. IB score: 24-30 (including specified grades in science subjects and English language)

    Programme

    Year one

    In the first year you are introduced to the basic principles of food science, nutrition and metabolism. A core programme of modules in biochemistry, genetics and foundation science provides the grounding for studies in subsequent years of the course. Modules in nutrition and food science present an introduction to the relationship between diet and health.

    Year two

    Nutrition modules in year two explore diet in relation to diabetes, obesity and coronary heart disease. Complementary food science modules consider the practical methods used in food processing and preservations, as well as their underlying principles.

    Year three

    The final-year research project provides the main core of activity for the third year. Advanced modules are taken in human nutrition, with an emphasis on nutrition (e.g. Public Health Nutrition, Nutrition Across the Lifespan) and food science (e.g. Food Factory Operations, Measuring Food Quality).
